CREAMY TOFU WITH PASTA

Ingredients:
2 t. margarine or oil
1 onion, chopped
1 clove garlic, minced
1 T. parsley, finely chopped
3 t. flour
1 1/2 c. soy milk
1 t. salt (optional)
1/4 t. pepper
1/4 t. thyme
pinch cayenne
1/2 lb. firm tofu, crumbled
1 c. green peas
12 oz. pasta, cooked according to directions
Sautee onion in margarine until golden, then add garlic. Cover
and cook for about a minute. Stir in flour and cook briefly,
then whisk in soy mild and cook until slightly thickened. Stir
in remaining ingredients and heat thoroughly. Serve over pasta
or rice.
Reminiscent of creamed chicken favorites, this dish is
particularly wonderful with spinach fettucine. Serves 6
