Q. You have opened a successful restaurant. At the end of the day, what accomplishment makes you the most proud?
Knowing my restaurant brings friends and families together in a positive spirit to enjoy quality food and drink in a warm & friendly atmosphere.
Q. Why did you decide to pursue a career in the restaurant business?
I have a passion for cooking and love to see the customers happy. It is instant satisfaction to see people enjoying themselves.
Q What has been your greatest professional success?
This restaurant venture. It has been my dream ever since I decided to pursue this business and my career path.
Q: What’s your secret to keeping customers coming in? What have been some of your most successful promotions, and where did they originate?
Keep things personal. Touching tables & talking to customers and getting their feedback.
Q. As a restaurant manager, how important is it to have actual experience in every aspect of the business, as you have?
Owning a restaurant takes a well-rounded individual and a very strong team behind them. Between my wife Mackenzie, Dave Moresi, myself and all of our staff we certainly have that.
Q. What advice can you give to those who would like to open a restaurant of their own someday?
Be prepared to work hard. The most successful restaurants I have ever worked in had hands-on owners. Long hours, holidays, nights & weekends. It’s not easy on your personal life, but you have to find balance.
Q. What is your signature dish?
The Veal or Chicken Saltimbocca has been by far the most praised dish on our menu. People also love our homemade dessert list.
Q. How did you come up with the idea for your restaurant?
Working with my wife and business partner, David Moresi, we knew North Adams needed a great Italian restaurant back into our downtown.
