Great, Great Barrington Grilled Baby Back Ribs
Ingredients:
2 tablespoons packed dark brown sugar
2 tablespoons paprika
1 tablespoon chili powder
1 tablespoon ground black pepper
2 teaspoons garlic powder
¾ teaspoon of salt
2 racks baby back pork ribs (about 2 pounds each)
Instructions:
Stir all the dry ingredients together in a small bowl. Rub the dry mixture over the ribs to coat evenly. Wrap each rack with plastic wrap and place on a baking sheet. Refrigerate overnight.
Prepare grill for medium direct heat. Remove the ribs from the plastic wrap and double wrap them with heavy duty aluminum foil. Grill covered in the foil for 25 minutes each side. Test for doneness by poking a fork between the bones; the meat should be very tender. If the ribs are not done return to the grill and cook for an additional 10-15 minutes until fork tender. Carefully remove them from the grill. Unwrap each rack and place them directly on the grill; cook for 2-3 minutes per side or until crisp. Transfer ribs to a cutting board and let rest for 10 minutes before cutting into individual ribs.
