How have I never eaten a pita?

These things are magical! The ones that I got were these whole wheat, multi grain, high in Omega, healthy blah blah blah. They are way healthier for me than bread, and they keep all of the juiciness from whatever I am eating from falling out and landing on my lap!! These are the best-designed things since...well...sliced bread!

I have tried filling these little gems with all sorts of stuff, like hummus, tomatoes, tofu, lettuce, roasted red peppers and cheese, which is amazing.

I also tried these with a roasted red pepper and garlic mayo chicken salad (which is delicious), along with tomatoes and butter lettuce...sooo amazing! But I think the best part for me is  that the juices from the tomatoes, red peppers, etc doesn't end up either on my shirt, or in my lap. I am notorious for spilling something on myself, almost once a meal! These are just amazing. I know that all of you have probably already tried these, but I just had to say that if you haven't, you should.

Stuff them with whatever you want, and then tell me what you love the most!

Yes, I have to admit, I am on another health kick...and no, this is not a resolution, and no, this is not the first one this year. I feel like I should be in a 12-step program for Health Kickers Anonymous or something. My name is Brie and I am a chronic Health Kicker! The first step is admitting that you have a problem, right?

This time, I swear things will be different and I will stick with a routine! I have decided that this time I will take tiny tippy-toe steps...(which of course, are steps smaller than baby steps) so that maybe the adjustment to this new way of life will be easier and not quite as scary. In the past, I tend to jump into this whole healthy living thing with both feet, and within a week I am running back to my chocolate ice cream and comfort foods. This time will definitely be different.

I have started off by substituting my bagel and cream cheese breakfast with a piece of peanut butter toast and a banana, or some oatmeal. Then, after I was content and comfortable with this small change, I added grapes to my crackers, cheese and hummus lunches. But when I am not eating crackers and cheese for lunch, I'm eating sandwiches, which aren't unhealthy, but I thought could definitely be healthier. :)

So I came up with a Mediterranean Style Sandwich. This sandwich is pretty much like a fabulous salad between two pieces of whole wheat bread, bagels or a pita. I made this for my lunch yesterday and made an extra for my friend, PJ to taste test. It was such a hit that PJ contacted me last night to make sure he remembered all the ingredients because he was at the store buying the items that he needed to make this sandwich for his friends too!

Ingredients:

A pita, 2 pieces of whole wheat bread, or a bagel

Thinly sliced cucumber

Thinly sliced red onion

Sliced tomato

A piece of red leaf lettuce, or romaine

2 tbsp. of your favorite hummus (I used Roasted Garlic Hummus)

Provolone cheese

Sliced turkey

Spread Hummus on your bread, pita or bagel (this will be the substitute to mayo). Then stack on your veggies, turkey and cheese onto the pita, bread or bagel. Finally, eat and enjoy a guilt free lunch!

Peanut Butter and Chocolate Panini

  DSCF2134 I saw this sandwich on a menu and then on a blog post from someone who had eaten a sandwich like this one at a restaurant yesterday. I am a firm believer in signs, especially food related ones, so I decided to make this sandwich when I got home from work yesterday. Peanut butter and chocolate is one of my favorite food combo's, and because I am Italian, it's pretty much a requirement to love good bread, so I knew this was going to be delicious.

I had a couple pieces of Italian bread laying around, peanut butter and some mini chocolate chips, which worked out well for this recipe. It took no time at all and was extremely delicious...this could be the end of my weight loss :)


Ingredients:

2 slices of bread

Peanut butter

Mini chocolate chips

2 tsp. butter

Thinly coat 1 side of each slice of bread with butter. Take one slice and smear peanut butter on the non-buttered side. The add a good amount of chocolate chips and cover with the other slice of bread, butter side up. Place sandwich in a panini press, George Foreman Grill, or just in a skillet. Cook until the bread is nicely toasted, and the chocolate has melted. Remove and place on a plate. Try to allow it to cool first before eating...this is the hardest part.

My Best Friend the Slow Cooker

Holy cow, I haven't posted anything in so long, sorry about my absence. I had a terrible pain in the right side of my face that left me pretty much debilitated for the last two weeks! We still don't really know what it's from, but I have definitely fallen back in love with my slow cooker since I've been pretty much out of commission. (I'm sure my husband appreciates it also).

Since I haven't been feeling very well, I have depended on my slow cooker to help me out, and oh boy has it really come through for me! I have been cooking for my husband by throwing things in this wonderful machine and letting it go until he's hungry! I have a couple of recipes that I've done this week that I felt the need to share. These are the easiest recipes and from the rave reviews from my husband, they are also quite tasty.

The first is a spin off on a bbq pulled pork sandwich. I, of course, had not been grocery shopping, so all we had were some misc. chicken parts, so I created bbq pulled chicken sammies!



B-B-Q Pulled Chicken Sandwiches

Asst. chicken parts: legs, thighs, whatever is on hand

Your favorite barbeque sauce

Vegetable stock

White wine

Salt and Pepper

Add your chicken parts to a 5-7 quart slow cooker. Sprinkle with salt, pepper and enough b-b-q sauce to coat each piece of chicken. Then add vegetable stock until the liquid covers half of the bottom layer of chicken. Toss in a couple slashes of white wine, and put the lid on the slow cooker. Turn the slow cooker on low heat and cook for 8hrs. Once the chicken is done, simply pull the meat off of the bone with a fork and place on bread. My hubby likes it drizzled with a little more b-b-q and topped with melted cheese.

The next recipe is for another chicken dish...in my house there is always an abundance of frozen chicken :) and this recipe is even easier than the last one!

Cream Of Mushroom Chicken

2 frozen boneless chicken breasts

3 cans condensed Cream of Mushroom Soup

Salt and pepper

Egg Noodles

In a small slow cooker, place 2 frozen chicken breasts. Add 2 cans of soup (do not add water), salt and pepper. Place lid on cooker and turn on low heat for 8 hours. After 7  1/2 hours, add in the final can of condensed soup and stir. Then place lid back on for another half and hour. In the meantime cook Egg noodles according to the directions on the bag. Once noodles are done, remove the lid to the slow cooker and turn off the heat. Take 2 forks and pull the meat, then place meat and sauce on top of the egg noodles.

To me, this does no look super appetizing, but from the rave reviews I received, this meal tastes much better than it looks!
